Carignan is a unique and fabulous varietal originating in the south of France and northern Spain. In Chile, it makes a wonderful wine with peppery spice flavors as well as abundant notes of black cherry and pomegranate. It is extremely floral and fresh, well-balanced and complex. This wine is bound to be paired with just about anything from roasted vegetables in Mediterranean spices to a pizza with red sauce!

About the Region, Vineyard, and Winemaking:
Carigno del Maule is born in the dry coastal area of Maule, Cauquenes, Chile. Coming from 70-year-old vineyards, property of the Guzman Family, it is settled on a granite soil with a high presence of quartz located 35 kilometers away from the coast.
This terroir represents the expression of this strain in its splendor. The grapes were sourced in the second week of March when it reached its optimum phenolic maturity.
This wine was vinified in open bins of 1000 kilos of capacity. The grape is destemmed and selected, part of the grape is slightly cracked to subtly release its juice. It begins with a cold maceration of 3 days where we protect with carbonic snow to slow down the beginning of the alcoholic fermentation (semi-carbonic maceration of pelicular whole grains).
The alcoholic fermentation is carried out with wild yeast, we made soft pump overs to homogenize the contents of the bin. Temperatures are controlled so it reach not more than 24-25 °. Once the alcoholic fermentation is done, skins, seeds and wine are kept an extra 8 days. The free run and pressing wine were blend. The ageing was made in fifth use French oak barrels (225L capacity) for 10 months.
